Fell down the pasta rabbit hole on the net today. I found a new way to cook pasta.  One page says it's just a better way to cook it.  Science says it can save you about 6 bucks a year cooking it this way.

We were all taught, fill a big pan with water, add salt, bring it to a boil, add your pasta, stir occasionally and then boil it to the desired texture.  Easy peasy.

Food and Wine tells the story of how George Parisi, a scientist not a cook, says a more efficient way to cook pasta is this:

Bring your water to a boil, throw in the pasta, stir and boil for 2 minutes.  Then, turn off the heat, cover the pan, and let it sit until 2 minutes under the time suggested by the manufacturer, stirring once in between.

Another site, Thought4food goes into more detail about stirring and measuring during the process.  The author also LOVES this way of cooking pasta mostly for the overly starchy water it produces.  I agree with the author that a starchier water would be an even better thing to incorporate into your sauce to give it a bit more.

The Scientist, Parisi, claims that just in Italy, this new method of cooking pasta will save the country as a whole $47.6 million and 350 million kilowatt hours every year. This new cooking method also reduces each individual’s carbon emissions by about 13.3 kg every year.

I can't really think of a reason not to try cooking pasta this way. In fact, it sounds less messy.  I may give it a try.  If you try it, let me know how it works.
